I don’t know about you but I am a huge snack-person. Most of the time I do have something to eat next to me even if it’s just a sliced apple. But sometimes I want to treat myself a bit with some really delicious vegan snacks that make me happy and fill me up until the next meal. I will share my favorites with you and if you have some other iddeas please feel free to share them with me! I’m always on the hunt for new recipes!
My first favorite is guacamole! I love avocados and guacamole is for me the perfect snack when I start feeling hungry and leftovers are perfect for the breakfast next morning. For that reason I mostly don’t put any garlic in or just a little bit, but when I know I will eat it all I use way more.
So here’s the recipe:
– 2-3 avocados
– 1 big ripe tomato
– juice of 1 lime
– 1/2 of a red onion
– salt & pepper to taste
– cilantro (optional)
– garlic (optional)
– Sriracha sauce (optional)
Take a small bowl and use a fork to mash the avocado until it is a nice blend. Cut the onion in really small cubes so you don’t bite down on a big piece of onion, mix it with the avocado. Cut the tomato in small cubes and only put them in the bowl, leave out the liquid to not make the guacamole too watery. Then squeeze the lime and mix it well in with the other ingredients and season it with salt and pepper.
I love spicy food so I do mix in some Sriracha sauce but that is totally optional!
And thats all. Guacamole is so delicious, healthy and quickly made that it makes the perfect snack. Enjoy it with your favorite tortilla chips or eat it with bread, it’s super yum!
When I’m more in the mood for something sweet I like to make myself some popcorn! I actually eat popcorn 2 to 3 times a week since I have bought a small popcorn machine that gives you exactly one serving, I mean, how convenient is that, right?
What I love most about it is that it’s so versatile! You can seacon it with whatever you like, even savory with salt and paprika if you want an alternative for chips. I don’t like salty popcorn too much so I’m sticking to the sweet things. And my favorite combo is cranberry sirup, cinnamon and a little bit of sugar. It kind of tastes like christmas, but that’s probably just me.
So I first make my popcorn, then drizzle a tiny bit of sunflower oil and the cranberry sirup over it. Be careful not to pour out too much at a time to not soften the popcorn! Then I sprinkle the sugar and cinnamon over it and stir it to spread it evenly. And that is it. So easy, so quick, so delicious! Perfect for my sweet tooth.
And since chips are not necessarily a healthy option for a snack I also like to switch it up by seasoning my popcorn with smoked paprika powder, salt and pepper. You could even take some herbs like rosemary, that would be nice as well!
